Quick meals for special diets

People with special diets can turn up any time and it is surprisingly easy to rustle the up a quick tasty meal, especially if you keep a few handy ingredients in stock as much as possible. You'll probably end up using them all the time yourself anyway, as making quick tasty meals is often handy!

Try keeping as many of the following as possible in stock, so you can mix and match them to create a tasty meal or two:

Quick protein foods:

  • baked beans
  • tinned chick peas
  • tinned kidney beans
  • dry red lentils (cooked in 15 mins in boiling water)
  • nuts, such as pecans and cashews

Quick vegetables:

  • watercress
  • spring onions
  • frozen peas
  • frozen spinach and kale
  • spring or pointy cabbage or curly kale (don't take long to cook)
  • bell peppers
  • fresh tomatoes
  • tinned tomatoes
  • fresh herbs
  • spices and curry paste (check for avoided ingredients)

Quick carbs:

  • bread, pitta, chapatis, etc
  • rice noodles (cook in minutes)
  • cous cous
  • wraps - corn ones are sometimes gluten free
  • tortilla chips
  • polenta (sometimes sold ready cooked)

Ready foods to mix and match:

  • stuffed vine leaves in tins
  • soup, such as Suma pea soup
  • Fry's or Redwood's ready to eat products
  • hummous
