Avocado & Pine Kernel Wrap

A versatile dish for picnic, snack, starter or simple main meal.

Ingredients
- 1 tortilla wrap, softened by a few seconds toasting or in the microwave
- 1/2 a ripe avocado, sliced or mashed
- 1-2 Tsp humous
- optional 1 Tsp egg-free mayonnaise (eg Plamil)
- 10 baby spinach leaves or chopped lettuce
- handful of pine kernels
Method
- Lay all the filling ingredients in a wide band across the middle of the wrap, with the humous and mayo spread on either side.
- roll up the wrap in the same orientation as the band of filling.
- Serve.
Notes
Make as many of these as you like and vary the fillings. Alternatives include:
- dairy-free cream cheese, chutney & steamed asparagus
- peanut butter and mashed banana
- vegan pate (home made or shop bought) and salad
- hot vegan sausage, egg-free mayo, sliced tomatoes, ketchup
- tasty vegan left-overs, such as curry & rice
