Blue Banana Muffins

Made these they other day and they were yummy so thought I would share the recipe... it was out of the cookery book 'How it all vegan' by Tanya Barnard & Sarah Kramer, it is a great book and has loads of great recipes in it - do invest!

Ingredients
- 14oz wholemeal flour
- 2 tsp baking powder
- 2oz sugar or other dry sweetner
- 4fl oil
- 12-16 oz soya milk
- 2 bananas mashed
- 2 tbs ground flax seed
- 4oz blueberries
Method
- preheat oven to 180C/350f or gas mark 4
- mix dry stuff in one bowl and wet stuff in another, then mix together gently, do not over mix
- spoon into lightly oiled muffin tins and bake for 35 to 40 minutes
