Cheatin Chicken & Sos Filo Roll

This is a direct vegan conversion of a meaty dairy eggy recipe. A great example how veganising recipes is possible and fun.

Ingredients

  • 1 packet of chicken style pieces by Redwoods or 1/2 pack of chicken style strips by RealEat
  • 240g of made-up sos mix (with water and 1 tablespoon oil)
  • 1 teaspoon of mixed dried herbs, or 4 teaspoons of chopped fresh herbs
  • 70g of broken/chopped nuts
  • 2 large leeks, chopped and lightly fried
  • 5 sun dried tomato halves, chopped
  • chilli flakes to taste
  • seasoning to taste (eg ground black pepper)
  • 1/2 packet filo pastry
  • olive oil

Method

  • mix the rehydrated sosmix with the herbs, nuts & seasoning
  • brush 4-5 pastry sheets with the oil and stack them on a flat surface
  • on half of the pastry put half of the sos mixture, place the cheating chicken, leeks, chilli flakes and sun-dried tomato on top and sandwich with the other half of the mixture
  • fold the sides and the bottom of the pastry over and roll to the end of the pastry (up its length)
  • seal down, brush with oil and cook in a moderate oven (180-190C, 350-375F) for 30 minutes
  • serve by slicing generously with a sharp knife
