Easy Satay Sauce

satay sauce on tempeh and steamed vegetables

This sauce goes on almost anything savoury for starter or main course, such as salad (gado gado), toasted tempeh or tofu, jacket potato and vegetables. It is rich and filling, but be generous with it.

The ingredients are infinitely variable, so you can make it to taste - miss out the chilli and increase the fruitiness for kids, pep it up for hearty adults.

Ingredients

  • apple juice
  • tomato puree
  • peanut butter (and optionally part tahini)
  • wholegrain or French mustard
  • tamari or soya sauce
  • 1 Tsp tomato ketchup and/or tsp of vinegar
  • ground coriander
  • mixed spices of your choosing, the more varied the better, such as Chinese 5 spice, curry/masala mix, tyme
  • chopped fresh or ground ginger
  • soya milk to thin it

Method

  • quickly toast the spices in a small pan
  • add everything else, heating through and stirring
  • thin with soya milk to the consistency you want
  • taste and adjust quantities according to taste
  • serve hot
