Vegan Recipes

Herby Potato Scones or Farls

If it doesn't matter about the gluten-free aspect, then you can use plain flour and ordinary baking powder.

It'll take more cooking time if you have to do them in more than one batch, which will depend on the size of your frying pan or griddle.

They might be nice with 50g of sesame seeds or ground nuts mixed in too.

Ingredients

  • 50g vegan margarine, such as Pure
  • 450g potatoes, peeled and cooked
  • 1-2 tablespoons chopped chives or spring onion and/or 2 tsp mixed herbs
  • 100g gluten-free flour
  • 2 teaspoons gluten-free baking powder
  • salt and pepper to taste
  • a sprinkle of nori seaweed flakes if you have any

Method

  • Pre-heat a griddle or thick-bottomed frying pan
  • Stir the flour and baking powder together, rub in 25g of marg, until the mixture resembles fine breadcrumbs.
  • Stir in the herbs/chives/onion.
  • Mash the potatoes, add 25g marg and season with salt/seaweed and pepper
  • Mix the flour mix and potato together thoroughly
  • Turn onto floured surface and knead lightly
  • Roll out until 1cm thick
  • Cut into squares or triangles and grease the griddle with marg
  • Cook for 4-5 mins each side until nicely browned
  • Serve hot

Notes

Lovely with cooked breakfast, soup or salad.
