Molly's Fruit Cake
A rich sugar-free fruit cake passed on by a mother who's kids really enjoyed this cake. It is called Molly's cake is because it was given to Cliveden's National Trust restaurant by an old lady called Molly who visited frequently.

Ingredients
- 8 oz chopped dates
- 1 lb mixed dried fruit
- 3 oz plain white flour
- 1 tsp mixed spice
- 2 oz orange juice
- 10 floz water
- 3 oz plain wholemeal flour
- 3 tsp baking powder
- 2 oz ground almonds
- flaked almonds for topping
Method
- Put the dates in a saucepan with the water and simmer until soft and mushy and cool a little.
- Put all the ingredients together in a bowl and mix well.
- Place in a greased and lined 2 lb loaf tin. Sprinkle with flaked almonds
- and bake for approximately 1 hour at 350F or 180C.
