Orange & Jam Sponge Pudding

This is so wonderfully easy and quick - I often do it for cookery demos in schools as no one turns up their nose at a sponge pudding! Plus they can't believe it's vegan, and you can buy all the ingredients in an ordinary supermarket.

Ingredients

  • Topping* slices of 1/2 an orange
  • 3 Tsp jam - "Italissima" blueberry no sugar jam is my favourite
  • 5 Tsp apple and blueberry puree (or other fruit puree, or more jam)
  • Sponge* 5 oz plain flour (or more if mixture is very sticky and wet)
  • 3 tsp baking powder
  • 1 x 125ml pot of soya dessert or yogurt (eg strawberry or vanilla)
  • 3 Tsp jam (so the recipe uses 6 Tsp of jam altogether)
  • 1 oz olive oil
  • juice of 1/2 a medium sized orange

Method

  • Arrange the orange slices in the bottom of a medium sized microwave-proof pudding basin
  • Cover orange slices with jam and puree topping
  • Mix the flour and baking powder, then add the rest of the sponge ingredients, mixing well and quickly, until a cohesive mixture so that it forms a mass rather than sticking to the bowl much. Add more flour as necessary to achieve this.
  • Quickly spread the sponge mixture on top of the topping and cover with a loose microwave-proof lid or plate
  • Microwave on full pwer (800 watts) for 5 minutes, slightly longer if lower wattage.
  • You could also make smaller individual sponge puddings, as in the picture, significantly reducing the microwave time for each (try 2 minutes).
  • Ready when a skewer or pin comes out clean from the sponge part. Turn out onto a plate. The jam will be very hot for a while. Serve with soya cream, soya custard or vegan ice cream, such as Swedish Glace, Tofutti or B'Nice.

Notes

Young kids would need help taking out the hot sponge from the microwave and turning it out.

This recipe is infinitely versatile. For example, it works beautifully with chopped ginger, a handful of fresh blueberries or dairy-free chocolate chunks in the sponge mixture. If you don't have soya dessert you can use soya cream or custard in the mix. Pineapple rings & juice and dessicated coconut make a great version too.

The orange slices or pineapple rings or any other fruit slices work particularly well in stopping the pudding sticking to the basin, as does lots of jam and puree. You could try marmalade instead if you like it.

This pudding could be steamed, though that makes it more hazardous for children to cook it. Steam for 20 to 30 minutes.
