Quinoa Oven Risotto
Similar to a recipe in the "The Glad Cow Cookbook", by Summer Keightley ISBN 0974218014, but with changes ! (as posted on VeganFitness.net) – it is very nice. The original recipe called for mushroom and onion powder. Could maybe also add, peas, courgettes, peppers, mange tout etc

Ingredients
- 1 cup frozen green beans
- 1 cup steamed broccoli florets
- 1 cup shredded fresh spinach
- 1 cup rinsed quinoa
- 1 cup veggie stock
- 1 cup non dairy milk
- 1/2 cup nutrional yeast flakes
- 2 cloves garlic, peeled and finely chopped
- 2 tbsp chopped fresh herbs - parsley, sage, dill etc
- 1/2 tsp mustard powder
- Seasoning
- Tomato slices or cherry tomatoes
Method
- Heat oven to 180 C, Gas 5
- Place the veggies into the base of an oven proof dish. Mix together the rest of the ingredients (except toms), and pour over the veggies. Top with the tomatoes and bake for 35 - 45 mins.
