Rich low-wheat apple pancakes

This recipe as it stands isn't completely wheat-free, but by using half gluten-free flour and half spelt flour it should be far more gentle on your digestive system than standard wheat.
You could instead make them with 100% gluten-free plain flour if you need to, in which case make sure your baking powder is gluten-free too.
Serve with sweet or savoury toppings.

Ingredients
- 1 cup gluten-free plain flour
- 1 cup wholemeal spelt flour (or another cup gluten-free)
- 2 tablespoons soya flour
- 4 tablespoons plain soya yoghurt
- 1 tablespoon olive oil or vegetable oil
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- pinch of salt
- soya milk
- 1 apple chopped small
- more oil for frying
Method
- Mix all except the soya milk and apple together.
- Then stir in soya milk until a thick cream for drop scones or thinner paste for thin pancakes.
- Mix in the chipped apple.
- Leave to stand for at least 5 minutes.
- Heat a small amount of oil in a non-stick frying pan or griddle and spread it around.
- Drop in some pancake mixture to spread as large and thin as you like your pancakes.
- When golden brown on one side and no longer liquid on top, flip with a spatula and fry the other side.
- Repeat until al the pancakes are cooked.
- Serve warm with anything that takes your fancy, such as soya cream and chopped fresh fruit.
