Tony's Cherry Chocolate Bombe

A masterpiece of easy luxury dessert by Tony Bishop-Weston of Foods For Life, and cook book author, such as the one named simply Vegan, to avoid all confusion.

To melt chocolate, break it into chunks and microwave, watching it carefully and stirring it when the shapes of the chunks are softening. You can alternatively steam the chocolate, stirring frequently. Do not over-melt.

Ingredients

  • 100g of plain dairy-free chocolate
  • 1 jar of cherries (e.g. from Lidl 99p)
  • 50g ground nuts
  • 1 to 5 dairy-free digestive or bourbon biscuits (optional)

Method

  • Whiz up 100g of melted chocolate with some bottled cherries (Lidl 99p), and some ground nuts. Chill.
  • If it's too wet after an hour in the fridge add in some oats or a crushed up digestive/ bourbon biscuits.
  • Set spoonfuls of it in the freezer.
  • Then pour over melted chocolate and let set, placing in the fridge until ready to serve.
  • Serve with soya cream and fresh fruit to garnish.
