Tyropitakia - Cheesey Triangles

This is an example dairy-free conversion from a standard dairy recipe.

I haven't actually tried it yet, but think it would work most nicely with smoked tofu and that the egg replacer is not really necessary - just a few teaspoons of oil maybe. Would be nice with sun dried tomatoes in too I reckon.

Ingredients

  • 1 packet filo pastry
  • 240g tofu, cubed
  • 240g dairy-free cream cheese
  • 2 tablespoons chopped parsley
  • 2 teaspoons finely chopped fresh mint
  • freshly ground black pepper
  • egg replacer - equivalent of 2 eggs following instructions
  • olive oil

Method

  • in a bowl combine the tofu, cream cheese, herbs and pepper and mix well.
  • beat the egg replacer as instructed on the packet, and add to the bowl, mixing it in.
  • cut the filo into strips 12 cm wide, covering them to avoid drying.
  • take a strip, brush lightly with oil and fold in half lengthwise
  • brush top with oil and put a heaped teaspoonfull of the mixture on the end of the strip and fold into a triangle package. Repeat with all strips.
  • Place finished triangles on a greased baking tray, brush the tops with a little oil and bake in a moderately hot oven (180-190C, 350-375F) for 30-35 minutes until golden in colour and serve hot.

Notes

If you wish to freeze and reheat these, try cooking for 25 minutes, cool and freeze, then defrost and bake for 10-15 mins when you need them.
